Appetizer

No other healthy vegetarian recipe comes close to this one; a Tomato and Pesto Bruschetta. The ingredients are: 1 loaf fresh crusty Italian bread, 3 pieces plum, or roma tomatoes (diced and seeded), 1 to 2 cups pesto sauce (store bought or homemade), and mozzarella cheese.

Before doing anything else, preheat your oven to 375 degrees. Slice the bread, preferably in a diagonal way. Spread the bread in a cookie sheet and place it inside the oven for 3 to 5 minutes until crisp and a bit golden brown.

Spread about a tablespoon or two of your pesto on top of the bruschetta, then sprinkle it with tomatoes; and top it all with mozzarella cheese. Place the bruschetta topped with pesto, tomatoes and cheese in the cookie sheet you used a while ago and place it inside the oven for 2 minutes, or until the cheese melts.
Main Dish

Italian Style Baked pasta makes for a great healthy vegetarian recipe. The ingredients for this scrumptious healthy vegetarian recipe are:1 yellow and 1 green bell pepper (diced), 4 oz asparagus (white or green depending on which ones you like), 2 pieces medium sized eggplants(eggplants lend a sort of meat flavor without the meat), 8 oz porcini mushrooms(sliced), about a palm full of chopped parsley, kosher salt and pepper to taste,  3 tbsp olive oil, 1tbsp dried Italian seasoning,  26 oz marinara sauce or tomato sauce, 1 cup skim ricotta cheese, ½ cup mozzarella cheese, ½ cup fontina cheese, and ¼ cup parmesan cheese for topping.Bring a liter of water to a boil, when bubbling pour in pasta with some salt and cook exactly as directions say on pasta package except try to reduce the cook time by 3 minutes.Next, Begin by sautéing the eggplants (they are the ones that cook the longest), after about a minute put in the porcini mushrooms, asparagus, and bell peppers.Next, drop in the marinara sauce, simmer this and then add the parsley that was chopped, and then comes the cheese which would include mozzarella cheese, ricotta cheese, fontina cheese before seasoning the sauce with salt and pepper.

Mix the sauce with the pasta that has been drained, and put the mixture in a baking dish then add parmesan cheese on top and bake until bubbly for about 30 minutes.Vegetarian food doesn’t have to be bland  for vegetarians or others alike as we see in this example.

When Eating Meat Is Easier: Why Go Vegetarian?

“Why be a vegetarian?” -This has to be the most popular thing that is asked again and again directed at new vegetarians. It’s confusing for some people to totally put meat out of their diet and most may not be aware of all the great wealth of delicious food out there for vegetarians. So when asked : “Why be a vegetarian?” vegetarians feel they have to defend their choice of food and can feel a bit on the offense but most of the time people just genuinely want to know what motivates anyone to become a vegetarian.

Meat is Cheap and Tasty!  Why be a Vegetarian When it’s So Expensive?

One of the arguments made against vegetarianism is that it takes a lot of work and thought.  At first glance, it may seem that vegetarians put a lot more work into their diet than meat eaters, but the truth is that they are usually just more careful with their diet and do everything they can to ensure that they are getting balanced nutrition.

Some say it’s more expensive to eat foods that take place of meats and this is usually a misconception. Some prepackaged substitutes can be a little expensive and this may be true for in some instances but there are great deals if you can arrange to buy in bulk. Some of the less expensive stuff include rice, oats, beans, and pasta.

The cost does go up a bit when you take fresh fruits and vegetables into account, but it is generally accepted as fact that we all need to eat more fruits and vegetables.  Vegetarians don’t eat many more fruits and vegetables than the servings that are recommended for the general meat-eating public.

If you look at the amount of resources that it takes to produce crops and compare that to the resources that it takes to produce meat, then we will see that plant foods cost less to produce.

Government subsidies are responsible for providing money to farmers to produce more meat and in turn this is why there are more artificially low priced meats in the supermarket.

Why Be a Vegetarian When Humans Were Meant to Eat Meat?

While many meat eaters make the argument that humans weren’t made to live without meat in their diets, there is actually plenty of biological evidence to the contrary.  Our bodies more closely resemble the physiology of herbivores than carnivores: our digestive system shows that our optimal food is plant matter, not meat.

While the human body is capable of digesting meat, eating meat long-term is known to cause many health problems.  High cholesterol, diabetes, cancer, heart disease, and osteoporosis are all directly linked to eating meat.  Although eating meat infrequently does not seem to significantly raise our risk for these maladies, the typical American diet contains so much meat that it effectively poisons our bodies.  Were we designed to be meat eaters?  The evidence suggests that we were not.

Why Be a Vegetarian?  Why Wouldn’t You Be One?

Reasons to go vegetarian are increasing and becoming more apparent.Having a healthy life and a health planet and protecting animal rights has alot to do with the definition to go vegetarian.Physical health,Emotional and financial well-being constitute everything needed to be successful in life.

Benefits of vegetarianism and vegetarian Diets

June 14th, 2008    Subscribe To Our Feed

Societies in the western world are driven to think more about food that is derived from animals and targeted to non-vegetarian eaters and because of this people are sometimes razzed about becoming vegans and can be considered a bit wierd to some crowds of people. In reality today we are finding out that the reasons for choosing vegetarianism are very compelling and are quite beneficial to healthy living.

Nutritionists And Physicians weigh in on
vegetarianism along with pros and cons

In fact, there are many nutritionists as well as physicians that actually prescribe and even endorse eating of vegetarian diets which they believe will help a person achieve better health and thus prevent becoming affected by illnesses. What’s more, another benefit to switching over to eating vegetarian diets is that they help in lowering cholesterol levels and are also effective in being able to shed unwanted pounds. Thus, today many new products are being sold in supermarkets as well as in shops that are essentially supposed to enhance a person’s health and which are derived from plants and which include foods such as yoghurts, cheese and spreads that are good for including in vegetarian diets because they can lower blood pressure, improve levels of energy and also help give the immune system a much needed boost.

It is also wrong to believe that vegetarian diets are a modern concept because they have been used by various cultures over the ages, especially in far off places such as India and also the Far East where most people in any case are vegetarians. In fact, a certain type of people known as Hunzas who live in the Himalayas eat nothing but vegetarian foods and the amazing characteristic of such peoples is that many of them live to more than hundred years of age!

Cholesterol is a real concern these days and keeping it in check is really important. One of the benefits of vegetarianism is in fact doing just that.Other benefits include lowering saturated fat levels, lowering body weight, reducing risk of heart disease and others.Obesity in the western world is a major problem also and lowering quantities of protiens and consumption of animal fats will help reduce problems in the future.Increasing intake of fruits and vegetables and fiber content can help in lowering body mass index and not to mention diabetes and high blood pressure. While eating limited quantities of meat along with emphasis on vegetarian foods from a vegan store can be a recipe for long life and ultimately is a personal dicision made by you and you only.
